Killer Blueberry Muffin Recipe

..Maybe not healthy but they sure are rich and good.
This is supposed to make 16 muffins but I over filled
a 12 muffin pan using paper liners. They had huge muffin
tops and so long as they don't burn, that's the best part.
..I'd just post a link to the recipe, but the site isn't
letting me log on for some reason.

1 cup white sugar
1/2 cup soft butter
2 large eggs
2 tbs. oil (I used olive)
1 cup sour cream
1/2 cup milk
1 tbs. lemon zest
3 cups all purpose flour
1 tbs. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
2 cups fresh blueberries

Set oven to 375
Grease muffin tin or use liners
Beat butter & sugar until fluffy. Stir in eggs. Add oil.
Whisk in sour cream, milk, lemon zest.
..Whisk together in seperate bowl flour, baking powder, soda, & salt.
Stir in half the flour mix to the butter mix. Then the other half.
Fold in the blueberries.
Spoon into muffin cups. (12 large ones to 16 small ones)
Place on center rack of oven.
Bake until tops are golden and toothpick comes out clean, about 30 minutes. A bit more for large ones. Don't let the tops burn!

...Not as time consuming as it sounds....Enjoy!

    ..I think the sour cream is what sets it apart. I brought a batch
    over to my Mom's on the occasion of my far flung sisters visiting.
    It's very rare that the three of us get together. Those muffins
    didn't stand a snowball's chance!

    Dale... Next batch y'all make,try using yogurt(full fat, that had been drained thru a colander and coffee filter over night[:p])
    It's also SUPER-GOOD with a spoon full of blueberry preserves!![;)][;)][:p]

    ..I'll give that a shot, Jeff. I eat my share of yogurt anyway,
    so why not? Suppose you could even play around with flavors like
    vanilla and such. I'm kind of stuck on Yoplait Peach Yogurt. The
    original, full fat variety...MMmmm Good.

    ..You mean that with all you manly cooks out there, nobody
    else bakes? Now, I know some guys that couldn't boil water,
    but when it comes to food posts, that usually brings the
    Betty Crockers out of the woodwork....Oh, wait. I know. It
    doesn't involve meat and fire. Thay explains it....[:D]

    CUmmon Dale... U know i'm a cookin machine!!(or maybe not)
    I have a butt on the smoker right now.(that covers the fire & meat) I also intend to make (from scratch)a large pan of honey/bacon corn bread and some tater salad.(if it don't rain all day AGAIN tomorrow)
    A small square Pecan pie,(from scratch) will also be baked-off before noon,so as to allow cooling time.
    That will be enjoyed with home-made frozen blueberry yogurt,for DEE zert!!
    (If I had a few ripe mangoes, that'd be the iceyogert)[:D][;)][:p][:p]
