Others may have a different definition, but I refer to it as the bloody meat around a bullet wound that has large clumps of blood and "gel" from the HYDROSTATIC shock of the bullet transferring energy to the animal.

    j3081,

I think charliemeyer said it pretty efficiently. Hydro-shock, or Hydraulic shock is caused by massive pressure absorbtion, i.e. what a bullet dishes out when it hits a body. That pressure ruptures all sorts of blood vessels around the wound(and further sometimes) and the meat then looks 'shot full of blood' or 'blood-shot'

I was a butcher for about 4 years and I know that adrenlin would make a beef tough , as a life long hunter I cannot see a bullet wound of any caliber beeing enough shock to ruin a whole carcus, maybe a shoulder or a hindquarter but thats about it. besides the ( meat of the deer already has blood running through it. but granted if an animal is wounded and persued before it has time to bleed out the adrelin will affect the meat to a degree. jmho.

In the meat processing business there is a term used called "black spot". Sometimes when cuttting beef you will run in to a large black spots (or blood shot) looking areas. A very experience person said that if the animal is stressed like witnessing the other animals being slaughtered in front of it, they will often get these area due intense stress.
