sako extractor in rem 700 bolt...how difficult is it to install?

If you have the knowledge, expertise and milling machine you should be able to read the directions and complete the project.
You have to understand the numbers and where they come from in order to get the extractor placed and installed correctly. Errors in the numbers result in a trashed bolt body.
Also remember that you have just cut a fairly sizable slot right next to and undercutting a bolt lug in a perfectly good Remington bolt body. You should ask yourself, "Is this really necessary?"[:D]

A good question. I wouldn't mess with it. Seems to be a common and popular passtime to trash the Remington extractor and advocate for the Sako type. I've never had problems with either. Best case schenario; you replace the extractor and the new one works as well as the old. Was it worth the time and/or expense? Your call.
Worst case schenario? You ruin a bolt and even if not, have made a significant change which will devalue the gun down the line.
