Got the Smoker fired up on my day off. 3 pkgs of Natures Promise Spicy/Hot Italian Sausage. (So 12) 6 Filets of Mahi Mahi, marinated in Garlic, Olive Oil, Various Seasonings,Kikkoman Soy Sauce and Olive Oil.
Smoke em' if you got em'.
May have to do some baked potatoes w/steamed sweet onions, Butter and Sour Cream.

Debating slicing up the Spicy Italian sausage and putting it in the Crock Pot with a big bag of fresh sauerkraut, for tommorrow. (SP?)
Dinner will be the Smoked Mahi, a couple baked potatoes, w/steamed Sweet Onions, Butter, Sour Cream. Salt /pepper Badia Sazone Tropical Seasoning. Vegetable side, to be determined. Maybe a fresh salad.
I could do without the saurerkraut

" must be one of dem new fangled pellet jobs as my old fashioned smoker has to be checked for temp on the regular, meaning i can't do much else but keep an eye on it... or maybe that's just my excuse for hanging with it and drinking beer... either way, I'm happy with my smoking!😁

Kinda overdid the fish. I believe that this is 1st or second time trying seafood in the smoker. Still kinda learning it all. I like fish jerky.
It is a digital (self controlling) time/temp Mastercraft smoker from Cabela's a few years ago on a Black Friday deal. You do have to check it periodically for Wood chips though. Lately I have been using Pit Boss hardwood pellets in it. (Their "Competition Blend.") Work was blowing out a 20-30# bag for $5.50 because the bag was ripped open during shipping/handling. Figured for that price, I'd try em.' I like them because you can fit more (by weight) in the little circular tube, wood chip loader tray. Less attention needed. Couple hours easy on one tube full.
Ribs have been (by far and away,) the best thing coming out of the Smoker. Man are they good. 😘

Nope, He was the best friend of Crazy Horse. Lakota, not Apache. Many years ago I had to have a screen name for something or other and tried Crazy Horse. Seems they already had one. I figured He Dog was obscure enough not to have been used. I have stuck with it since.
A friend smoked a deer hind quarter for me. Soaked in something called Morton's Tender Quick brine for six days. Applied a rub and wrapped in foil for 3 days. Smoked at 300deg until interior temperature was 140deg. Sliced thin on a slicer.

Came home with three different (types) racks of St. Louis style ribs as "Samples."
These are all cured and Cryovacked in heavy duty packaging with sauce already on them. (High end ribs.) Two different types of "Taste of Inspirations," and a "Chef's Choice," with "Pete's Hot Sauce" infused BBQ ribs. (I like Hot and Spicy so these should be good.) 😁
Off for two days now. Rainy and cold. 28° tonight. Woodstove going. Just got home from work relaxing. Fed Buddy after letting him out. Chilling out drinking a couple cold beers.
I've got lots of food to throw in the smoker over the next couple days. (Plan on doing Tacos as well.) Be eating good next few days. (Fridge and freezer absolutely stuffed.

Every year I throw a party where I cook four ducks in the smoker, using cherry wood. Takes about ten hours. The smoked ducks are a big hit.
