With these rings spaced 5" apart and two sets of .020 offset spacers (front up rear down) I would have 27.5 MOA built in, correct?

I'm going along with your math but I think you have the rings reversed. To gain more MOA for long range shooting, you should have the additional elevation in the rear ring and the front ring needs to be lower. In another way, the scope should slope down from high rear to low front.
