Gramps old Ithaca has a old ghetto repair with a brass nut and bolt securing the split in the but-stock grip...
Any suggestions on alternative solutions to dress up this classic sxs?

A good picture would go a long way to helping us see the extent of the damage.

Remove stock from gun and unbolt the repair, hopefully there will be a gap present. modern day 2-part epoxies work exceptionally well, and use a popsical stick to press the epoxie deep into the gap and clamp using scrap wood pieces to not mar the finish. do not use a 5 minute glue as you'll need time to fill the gap and wipe excess off the stock.
look for a threaded 2 part rivet in the hardware stores nut & bolt trays to fit the old repair hole only shorter. probably locate this before glueing so you can clamp the crack using this also.
as to the final fill of the holes, hopefully a colored wood putty.

Going to go both ways and fix the old as well as get a new stock for comparisons.
