Re-finishing after removing bluing

I have a Stainless Steel Mdl 64 revolver. I was lucky enough to locate a Wichita rib from the 70's which I installed. The problem is that the rib is blue and looks weird on the SS revolver.

I want to remove the bluing (I have Naval Jelly at home) but what do I do after the bluing is gone? I heard the metal will be very susceptible to rust ("in the white")

What are my options to get the metal to somewhat match the rest of the revolver and still be rust resistant?
