Damn the wife made the best deviled eggs today...chopped thick cut bacon, chopped jalapeno, cilantro ....boy are these good[:p]

    How did deviled eggs get their name?

    In the 18th century, "to devil" was a verb that meant to cook with hot spices; foods cooked in this manner were referred to as "deviled". Hence, deviled eggs are named for the spices used in their creation

    I make deviled eggs, then smoke them @225 for 30 minutes- they taste great!

    There's this one recipe that uses anchovy as the salt I've been meaning to try. But damn it if it ain't work making them devils. I think the recipe calls for the anchovies straight out of the can. I think it'll be better if the fish spent some time on top of a focaccia bread in a toaster then placed on top of the eggs. The bread gets a little anchovy and olive oil flavor.

    Also with Kewpie mayo full of MSG goodness [:p][:p][:p]. I don't care if that stuff kills me tasty is tasty.

    I have to admit that I do enjoy a good deviled egg or several.

    My only trouble is that I have made really good ones and not so good ones and do not ever follow a specific recipe.

    They are always made with what I have on hand in the pantry, so what whim that sounds good at the moment goes into my yolk mixture.

    Vinegar is key but apple cider or white really does change the flavor.

    Dill pickle juice is never consistent but usually helps me find a tasty alternative to vinegar.

    Also, just a miniscule amount of something sweet like honey or sugar helps.

    OH YEA, raising chickens means lots of eggs and finding ways to fix them.

    I have figured out that hard boiled eggs that are super farm fresh are not the best to use. They are very difficult to peal off the shell.

    Best to only use eggs that are a couple of weeks old for hard boiled.

    Just my 2 cents and would love to hear from those with more experience.

    Local place has the best deviled eggs ever!!
    Just a whisper of horse radish, a drop of Siracha, and a small piece of candied bacon for garnish! They are addicting!
    $5.00 for 6 and worth every penny!

    Here's a hint: instead of paprika, use Tajin Seasoning. Tajin has salt, chili powders and dried lime among other spices. The lime makes a notable addition to the taste. Most supermarkets have it.
    I may be a bit crazy - but I didn't drive myself.

    A friend of mine brought a dozen smoked deviled eggs to my Independence Day party a few years ago.

    The next year he brought 2 dozen. He was mumbling something about so Swedish Sumbich eating all of them the year before.

    Place we go in Vegas called Yardbird has some of the best ever. Yes those are fish eggs on top.

    I have been drafted to be the deviled egg preparer for all of our family gatherings. I use yellow mustard and Miracle Whip mainly, but add sriracha, green olives and jalapeno to the mix. Toppings will depend on what is on hand. As said before, eggs that are at least 10 days old will peel easier, so plan ahead. I tell everyone I boiled the methane out of them.

    I made 50 deviled duck eggs last weekend for the family gathering. Put siracha in some of them. Good stuff!

    I do not care for deviled eggs...

    I do not partake - it's not my thing.

    However my mother makes them in large batches for family gatherings and special events...

    Makaila has a recipe - it's one of the few foods she can and will prepare - she often brings them to special events amongst her circle of girlfriends and proffesional peers...

    I have provided them both with a nice assortment of egg plates and egg serving platters.

    Some are subdued attractive antiques - some are kitchie / tacky cast offs from the 70's shaped like eggs or chickens - in classic 70's colors and patterns...

    They each now have about a dozen to choose from - sometimes it's about the presentation and evocation of childhood memories.

    Best ones I have ever had i smoked them on the traeger and added fresh becon bits on top.

    When they're good; they are fantastic.
    When they are darkening, dripping wet, crusty on top & warm; eeesh!

    I chop up DaryMaid kosher dills, smoke the paprika over a red chile pod from the ristra, start the eggs in cold water, and mix up the Hellman's and Durkee's and Tomatillo Salsa, chuck in the yolks, stir & serve.
    I like to have toppings as well; shiitake slivers, green olive slices, browned cubes of Spam, caramelized onions, bacon pieces & 'chovy filets are a good start[:p]
