    OK :

    Cooking "Fiesta Chicken" : it has become one of my favorite meals ! and Easy too !!! Yum !!

    Fiesta Chicken :

    boneless chicken parts ( enough to cover the bottom of the crock - more if needed ) :

    1 pack Ranch mix :

    1 pack chilli ( or taco ) seasoning :

    Garlic ( to taste ) :

    Ground black pepper :

    Beans of choice ( 1 - can Drained : chilli or black or red kidney or ? ) :

    1 - can of corn ( drained ) :

    1 - can Rotel ( or something sim. - Drained ) :

    1 - pack creme cheese :

    Japaleno peppers ( or other peppers to taste ) :

    Cook in crock till chicken is done : mixture will be thick and bubbling :

    Serve with tortilla chips and a salad and or rice and ???

    Really Good !!!

    Tonight's dinner is going to be very simple. Whole chicken wings salted and peppered cooked on the top rack of my grill. Sweet potato cut down the middle, washed and foil wrapped on the lower grill grate. A couple ears of fresh corn soaked in water and also cooked on the grill in their husks.

    About covers all the basic food groups for me. I have some good homemade barbeque sauce that has a bit of a brown sugar sweet and a Franks hot sauce tingle to it that I will use to dip my wings in. The sweet potato's and the corn will get more drizzled butter over them than my doctor will never hear about! Ohhhh?..and please pass the salt!

    Possum strips over the grill, medium to well done, Aldis canned corn, Wal Mart peas and some Dollar Tree garlic bread!! HMMM DEEEELICIOUS!! GG would be embarrassed with that setting.

    Last night had Nachos El Grande ... wifes favorite, not mine but OK.

    Tonight will be having BLT's :D

    The nights have been starting to cool down around here the last week or so. Was 45 degrees this AM and I'm starting to get a BIG craving for some Autumn Chili! :mrgreen:

    Just now starting to get garden tomato's to ripen and have several to stew down for a good chili base. I will make a fairly large batch today and should enjoy several meals for the days ahead! Chili always improves a few days down the road!

    Well, I lied about making some chili for today. Ended up thawing out some more whole chicken wings and a small pork tenderloin that the Mrs. wanted to grind for her famous vegetable and rice stir fry.

    I doused the wings with a lot of garlic powder and some salt and pepper then cooked them on the grill along with about 3 thickly cut chops from the pork tenderloin. Some fresh picked sweet corn from my cousins farm should top off quite a Sunday dinner!

    ON a side note, my wife must be some kind of a clairvoyant or something! Earlier this morning she told me not to forget to take my spare propane tank down to the exchange place for a full one. You may have guessed that about a half hour into my grilling.....I ran out of gas! :o

    Yes, you can not beat them "Serloin steaks."


    They are a might Surly. (But) They can be beat in to submission with applicable force, (not judicious use of force, mind you.)

    A tenderizing hammer/mallet might prove useful in that regards.

    Tonight's meal will put my semi annual craving for tender young calves liver, lightly coated with flour, salt, and black pepper, simmered in hot butter with a very large Vidalia onion sliced into thin ringlets to rest.

    Topped off with some of the wife's fine cold macaroni salad and a couple hot ears of freshly picked sweet corn.

    Dang! Just writing this has made my mouth to start watering all over my keyboard! :o

    Almost forgot, I will wash it all down with a tall glass of lightly salted buttermilk!

    Got lazy today. I took a large buttercup type squash, cut it in half and gutted the seeds and afterbirth out of the middle. Squash was big enough where the two half's held 2 1\2 large bratwurst links each! Wrapped them in foil and baked on the grill.

    No dirty dishes to clean up except for the utensils and plates! Will have cottage cheese on the side laced with some fresh chives and a tall glass of buttermilk.

    leftover meatballs and leftover raviolis, mixed em together and put over about an inch of biscuit mix in casserole dish covered with cheese and it is all melting together as I type, even if it ain't no good it got rid of the leftovers........
