    Tonights supper was as follows Shrimp and smoked sausage kabobs with cajun spice and old bay seasoning on the grill Thin sliced oven fried french fries drizzled with olive oil and seasoned with Bojangles french fry dust Experimented with some thin sliced steak kabobs but need to work on my seasoning wasnt bad just was not great .
    cry Havoc and let slip  the dogs of war.....

    After putting the Rendevous through the track today, thought better treat myself to double helpings of batter dipped possum ribs with Kroger BBQ sauce, sides Aldo rolls and some WalMart seasoned green beans with the liquid being Natty Light at 39 degrees. Life is grand :arrow:

    Good Morning Ken!

    I don't usually follow a specific recipe. For example, sometimes I'll par-boil or soak the beans and maybe cook them on high heat or a mix of high and low. Generally, I always follow the recipe on the bag for basic instructions, but when it comes to seasoning I might use only salt. Always a generous amount to start. I just cup my hand to measure, depending on the amount of beans. With this batch...about two pounds of beans, I'd estimate the starting amount was about two to three teaspoons, minimum. As you would know, it makes no difference when you salt the beans as long as you have enough time to cook them until they are just right...on the firm, but done side. Salting early does add flavor. Wth this batch I added a generous amount of bacon grease and a couple of fairly large ham shank bones, covered with water about 1/2 inch, cooked on high for about two hours, and the rest of the day into the evening on low, stirring and checking for doneness, adding water, and salt to adjust the flavor more frequently as time wore on. I added two packages of smoked ham shank meat cut into small to bite size pieces late in the process. Once done, I ladled out about three quarters of the beans with soup, leaving a generous amount of both in the pot to cook down on low heat for a couple of hours. Mashed the beans up until the soup was thicker, and then stirred it all together again, and placed in a container for the fridge. After it sat in the fridge overnight and the next morning the meat had tenderized perfectly. I like to serve it up in a bowl after stirring in a bit of water, some rice, and a slice of cornbread, quarter of onion and a Jalape?o pepper. Matter of fact, I'm getting ready to have me a late breakfast of it kind of quick like!!!!! :)

    Went shopping today and picked up an Old El Paso kit for taco's. 6 soft shells and 6 hard shells. A family pack of ground chuck on sale, a bunch of greenhouse grown tomato's on the vine, a pound of dry cheddar cheese, a head of lettuce, a few vadalia onions, a can of refried beans, a bottle of sliced jalapeno peppers, a pint of fresh sour cream, and a bale of White Cloud toilet paper.

    I have not enjoyed any taco's for quite some time and am pretty sure that everything I bought will be made into a fine meal and there will be a lot of stuff not used in this days preparations used for other endeavors.

    I also make a kick * nacho where I buy those round corn chips for a base crust and top with just about everything that goes into a taco. As I mentioned, it has been a long time since I had some TACO"S! :P

    PS: Does anyone think that our new site emicons (similies) are kind of LAME!
