4 dove breast, fillet the meat from the bone with a fillet knife.

8 mini sweet peppers, cut a quarter off the side of each pepper, leave the stems on.

    1/2 cup cream cheese

3/4 cup Gouda cheese finely shredded.

Beau Monde and garlic powder, for taste.

4 pieces of bacon, cut each in half.

Bring the Gouda cheese and cream cheese to room temperature. Mix the two together and add just a few drops of milk. And add the Beau Monda and the garlic powder in.

Stuff each pepper with mix, lay a dove fillet on top and wrap with a piece of bacon.

Cook in preheated oven at 400° for 20 to 22 minutes. Enjoy.

Note: You can use Jalapeño peppers instead of sweet peppers, but I have never been much of a fire eater, so I use the mini sweet peppers.
