Picnic/Camping food

Anyone have some ideas for a good sides for picnics or camping? We camp pretty much every weekend through the spring, summer, and early fall months. After awhile the corn on the cob, pasta salad, potato salad, deviled eggs, and baked beans get old.

Any ideas/recipes you like?, particularly something that can be served cold would be nice.

    While this one may not be great cold, it does give you some side order ideas. About 10 Gazillion recipe sites on the net. Google search should do ya nicely.

    It's not cold, but take el cheapo frozen burritos, wrap them in aluminum foil and toast them on the fire coals...Kids love it, and it

    Tacos, meat (with taco seasoning)

    Fry the shells a little bit, fresh lettuce, maters, red onion.

    Make some fresh pico, cilantro, red onion, jalepenos and tomatoes.

    Tasty!

    Also you can have breakfast tacos, just put eggs, sausage and cheese in the tortillas instead!

    I used to love foil packs, like I learned at Girl Scout camp.

    One hamburger patty, one sliced potato, one sliced carrot, one sliced onion. Salt and pepper. Wrap in foil, throw into the hot coals, keep turning it over every five minutes for about a half an hour.

    It's a little mini-pot roast...

    Go camping w/ only your Rambo knife (fishing line and 3,4 matches in the handle.

    Only eat what you catch or kill.

    That would not be boring.

    I went camping when I was preggers with my daughter (yes she loves it) and didnt have a "camp stove"...all I had was a fire with a grate, but damn the meals were good...

    Foil is a good---no it is your best friend...LOL...I did steak and mushrooms wrapped tight in foil and cooked to perfection...also did a stew of sorts....beef cut into chunks,...add mushrooms, potatoes, veggies, (carrots and onions)...add a bit of butter, and wrap tightly....let it all steam in the foil and when done, you have a very tasty meal...

    Another good one and I still love this to this day...take biscuit dough, wrap it round the end of some doweling (bout and inch thick doweling) and bout an inch up the doweling, cover the end of the doweling as well...

    we used poplar trees but they arent available everywhere...

    hold it over the open fire (best done as a late nite snack), the dough is cooked when nice and toasty brown....slip it off the doweling, add butter and jam...ohhhhhhhh damn its good...you can add whatever you like to it..but it comes off the doweling like a little pocket, and when its filled with butter and jam, its to die for...


    something else is a seafood salad...just a regular tossed salad, but add shrimp, crab, lobster etc...

    Shredded BBQ Beef, is always good cold or hot. 3 bean salad, smoked sausages.

    Trying to remember Potato slices with lots of onions. And Brats. Thats a good one.



    But when I used to do a lot of camping it was mostly.

    Pickled Asparagus.

    Jicama, with lemon (and Salt if your Doc is silent)

    Mandarin Oranges/Cottage Cheese

    Peaches/Cottage Cheese

    Fruit Salad (or Fruit Cocktail)

    Dilled/Pickled Green Beans

    cooked, but cold Ramen or Yakisoba noodles, with a little oil, and Orange Zest, maybe slivered Almonds

    Thai Red Curry Noodles (you'll need Hot water)

    Cranberry/Orange Compote

    Cranberry Sauce, right from the can

    Whole Cranberry Sauce, With Apple Pie Filling, and Butter Fried Onions, stir 'em up. I like ratio of 2:2:1.

    Hummus, Pita bread (There are hundreds of variations on the Hummus)

    Celery Spears, with Cream Cheese filling, dust with Paprika

    Carrot/Raisin Salad

    Pineapple rings, roasted or cold

    Pickled Eggs, Jalapeno Eggs, Devilled Eggs (separate tents, please)

    Spiced Peaches/Apples/Pears

    Jello, with or without Fruit, with or without veggies

    Extra Cheesy Mac & Cheese, baked till it browns on Top, then cooled, and cut into squares, served cold. With or without toasted bits of SPAM.

    Red Beans and Rice

    Dirty Rice

    Rice with Currants

    Rice with Raisins (the rices served cold)

    Jambalaya

    Cous-Cous Salads

    try this broccoli salad . we found it in a local smoke house and researhed the ingrediants on the web .cant get enough of it since then .

    PREP TIME 10 Min
    READY IN 10 Min

    SERVINGS (Help)
    Servings
    US METRIC



    INGREDIENTS
    6 cups fresh broccoli florets
    1 1/2 cups shredded Cheddar cheese
    1/3 cup chopped onion
    1 1/2 cups mayonnaise
    3/4 cup sugar
    3 tablespoons red wine vinegar or cider vinegar
    12 bacon strips, cooked and crumbled



    DIRECTIONS
    In a large bowl, combine the broccoli, cheese and onion. Combine the mayonnaise, sugar and vinegar; pour over broccoli mixture and toss to coat. Refrigerate for at least 4 hours. Just before serving, stir in the bacon.

    Simple, but one of my favorites:

    sweet onion. cut it like you're going to quarter it, but do not cut all the way through. slap 2 tbs of butter on top + a couple pinches of garlic. wrap it in foil, put it over the fire for 15 minutes.

    Whatever you like to fix at home, to eat, you can fix it while camping. I do the majority of the camp cooking in my 5 dutch ovens. There is really no great mystery about cooking in these black pots. Experiment, and enjoy.

    I used to take hot dogs, slice them and put cheese inside and wrap strips of bacon around them and wrap them in aluminum foil and lay them in in the coals. My mom called them pigs in a blanket. Good stuff.

    Yea, we make just about everything you can imagine-walking tacos, enchilladas, spaghetti, whatever-but I'm always looking for something that I can get all ready at home and spend less time messing with while I am camping.

    Never heard of it, just googled the recipe and sounds good. I'll have togive it a try also.
