Stuffed bell peppers

    I'm having a craving for some good stuffed green bell peppers. Along with mashed taters, peas and cornbread.

    I make mine very Italian style, like the ones in this pic.
    Lots of spices, ground beef, just a little rice, baked in lots of home made sauce.[:p][:p][:p][:p][:p][:p]

    1 pound Ground pork and 1 pound Jimmy Dean (Sage or Hot) and a bit of chopped white onions. Ketchup the top to prevent burning. Pasta sauce is okay but Ketchup is mo' betta. Stuffed peppers and "sauce" over rice. Damn fine eats.

    Ground beef on it's own gets too dry and a pound of Jimmy Dean to a pound of beef does help.

    if U use cooked "Jasmin" or "Fragrant" rice,it comes out MUCH better...[:p]

    I love them. My grandmother made the best; she used a mix of ground beef and pork and they were never too dry or too greasy. We always had them served with rice and her corn bread. My mother, who is a fine cook, could never duplicate grandma's stuffed peppers.

    When I was very small Mrs Pellegrino across the street made the best peppers. My moms were ok, but I always tried to make sure I was eating over at Tony's when his mom was making them. When my kids were younger they did not care for peppers, but they seem to have grown out of that. I may need to try making some again.

    My wife makes them often when I have big green peppers in the garden.

    My wife, with her Russian background makes the most incredible stuffed peppers and cabbage rolls. My mouth is starting to water just thinking about them!!

    I usually have a minimum of 16 pepper plants in my garden every year with only 2 or 3 being green. Most of the pepper plants are yellow, orange and red bells. I'll pick the peppers early afternoon and we will eat them for supper. With super fresh peppers, stuffed peppers are mind numbing!! I can hardly wait!! Come on summer!!!

    Okay but.I'm not one for exact measurements. {hey!! I'm Italian!}

    Brown about 1 1/2 lbs ground beef.
    Remove beef from pan ,leaving the drippings.
    Into the pan goes 1 chopped onion, chopped pieces left overs from bell peppers tops, garlic powder, s&p, dried basil, oragreno, a little red pepper flakes.

    cook till soft and tender.

    Mix the the cooled meat with one large egg and about 1/2 cup OVERCOOKED cool rice.
    Add the rest of items from pan and mix.
    stuff your peppers.
    bake, covered, in your home made sauce, about half way up the peppers.
    remove cover and pour more sauce on top of peppers for last 15 minutes of uncovered bake time.

    The peppers are done when the skins are soft.

    I've found that ground pork sausage to work really well, as the meat. I've tried a lot of different combinations of beef, and pork, but found that the pork sausage, by itself, to work the best. Well, that's what my taste buds call for.

    To keep it simple, I use a bit of Prego, for the sauce.

    To speed things up, I've been known do use a bit of instant rice. However, if ever called to the floor, I shall deny ever using instant rice. [:D]


    Since it's about taste, you might not like my idea. But, what if you do? [:)]

    By they way, wasn't it the queen of Spain who wanted Christopher Columbus to bring her back black pepper...? But, he brought back these stupid green things, and called them "Bell Peppers", instead? Got to love an enterprising man, if my story's correct. But, I could have made it up/you never know. [:p]

    My wife is also a Russian, and she makes great stuffed peppers and cabbage rolls. They are really good with sour creme (not the low fat kind!).

    I love them. Though, I don't love the heartburn I get afterwards. It's funny how bell/sweet peppers give me problems but hot peppers don't.
