who knows sausage?

A question came up over the weekend during an extended malt beverage session with some friends.

Why exactly is it called "summer" sausage?

(If you think the question is strange you should've heard some of the theories that got thrown out. [:p])

    Summer sausage is the general term for any sausage that can be kept without the need of refrigeration. Summer sausage is usually a mixture of pork and other meat such as beef and venison. Summer sausage can be either dried or smoked, and curing ingredients can vary significantly, although some sort of curing salt is almost always used. Seasonings may include different types of sugar, mustard seeds, black pepper and garlic salt.

    In spite of its name, summer sausage actually tends to be made in the autumn, during traditional hunting seasons in North America and Europe. Summer sausage, like all sausages, makes use of leftover scrap meat and organ meat that would otherwise be wasted.

    A particular kind of summer sausage is popular in North Dakota, occasionally containing cheese in addition to pork and beef meat. This type of summer sausage is smoked rather than dried and is generally best kept and eaten cold, though it can be cooked.

    My ex wife sure knew her sausage. She couldn't get enough.......

    Now ya did it! gotta hit the Corralitos Market and go get some of the best smoked sausages on the west coast.

    Think they have about 40+ kinds. Not bad for a mom and pop store that smokes Game, makes there own sausages, hams etc. Now I am hungry. [:D][:p]

    One thing I do know about summer sausage is not to eat a large amount of it and wash it down with an abundant amount of Corona. You'll be very sorry the next day and definatly plan to stay VERY far away from all people (specially your lady friends)![:0][xx(][:D]

    Kuby's in Dallas,TX.

    They make some venison jalapeno and cheese summer sausage that is out of this world. Give me a box of crackers, block of cheese, roll of summer sausage and some beer....don't talk to me for a few hours because I won't be talking back.

    JUST GOT BACK FROM MILWAUKEE (NRA CONVENTION), HAD TO HAVE LUNCH AT MADERS (GERMAN REST.) AND UNSINGERS (SAUSAGE SHOP) WAS JUST ACROSS THE STREET[^][:p]

    Maders!! A classic German Restaurant that's probably been there before Milwaukee even existed!!!!!!!!!!!!!!! One of my favorite places!
