Crawdad,Crawfish Recipes......Help

Ok folks,I could use some help here...I got hooked on these in ohio,kentuck,and I've made traps and caught a mess of em here up North.You know all my neighbors/buddies think I'm nuts but we all know better don't we[;)]?I just need some various wyas to fix em,any help would be appreciated.....L.H.

    SIMPLE CRAWFISH ETOUFFEE


    1 LB crawfish tails
    1 can cream of mushroom soup
    1 can cream of celery soup
    1 lg onion (chopped)
    1 bunch green onion (chopped)
    2 or 3 garlic cloves (minced) to taste
    2 or 3 TBS parsley (chopped) to taste
    butter, oil, or no-stick spray (enough to saute' vegetables)
    Tony's seasonings (to taste)

    Saute' onions, green onions, and garlic in butter, oil, or no-stick spray in a pot until onions are browned and wilted.

    Stir in cream of celery and cream of mushroom.

    Increase heat and bring to a boil stirring constantly.

    Reduce heat to medium and stir in crawfish and Tony's seasoning.

    Cook for about 10 minutes and reduce heat to medium. Sprinkle parsley on top.

    Serve over hot rice. Makes about 4 servings.

    I don't know where you would get the crawfish fat, try butter.

    As you can tell I love Crawfish Etouffee.

    CRAWFISH ETOUFFEE
    INGREDIENTS
    1 lb. cleaned crawfish tails,
    crawfish fat and water to make 3/4 cup
    1 heaping tablespoon tomato paste
    1 stick margarine or butter
    1 medium onion, chopped fine
    1 heaping teaspoon all purpose flour
    1 tablespoon parsley
    1 teaspoon salt
    2 very thin slices lemon
    1/4 teaspoon cayenne pepper
    1 tablespoon green onion

    INSTRUCTIONS
    Use a saucepan with a tight fitting lid to etouffee, (French for smother). Season crawfish tails with salt and pepper, set aside. Melt butter, add onion, cook over medium heat until tender. Stir in the flour, blend well. Add water, crawfish fat, lemon, tomato and garlic. Cook slowly, about 20 minutes, and add a little more water occasionally.
    When sauce is done, add crawfish tails, cover with lid. Cook 8 minutes. Season again, to taste. Add green onion and parsley, cook 2 minutes longer.
    Serve on steamed rice. Garlic bread and green salad is a good companion to crawfish etouffee.
    COOKING TIP: Commercial crawfish are pasteurized and practically cooked. If you are using live crawfish, wash, then scald in boiling water. Clean them, picking off the shells, leaving tails whole. Save crawfish fat.
    When tails and fat from live crawfish are added to cooked mixture, it should be cooked 10 or 15 minutes longer.

    Okay. For the sake of variety.

    Crawfish Kowalski

    Amount Measure


    2 cup Rotelli pasta -- cooked
    4 tablespoon Butter
    1/2 cup Green onions -- chopped
    1/2 cup Polish sausage -- chopped
    1 tablespoon Garlic -- minced
    1/4 teaspoon Cayenne pepper
    1/2 teaspoon Black pepper
    1 cup Heavy cream
    2 ounce Dixie (or other) beer
    1 pound Cooked crawfish tails
    1 tablespoon Parsley -- chopped
    Salt to taste

    Meanwhile, saute green onions and sausage in butter until onions are tender but not browned. Add garlic and saute for 1 minute. Add peppers, cream and beer. Simmer, stirring until slightly thickened, for about 5 minutes. Add crawfish simmer 2 to 3 minutes, stirring. Add salt to taste, toss in pasta and parsley and serve.

    It is stuff like this that makes this forum so amazing! Now I have to admit the last time I thought about crawdads was ten years ago in Biloxi Mississippi.....and they did taste good down there. I guess I'll just have to try one of these receipe's...just amazing. Beach

    Hey Powder the fat is in the heads that what you suck out when your eating boiled crawfish. Just stick ya finger in there and scoop it out.

    Another often overlooked way of serving them is to simply roll them in corn meal and a touch of flour and salt, then fry.

    This was the first thing my mother let me fix as a child, and I'm talking at about six. Can remember standing in a chair to reach the top of the stove. [:D]

    Now,the very best way to cook a crawdad is to take 1 each fishing pole,hie yourself down to the river,string said bait on hook,and drag in a big ,goodeatin' catfish or bass.....hehehehe

    Boil 'em.

    Peel 'em.

    Salt 'em.

    Butter 'em.

    Eat 'em.

    Wash 'em down with beer (or cola).

    Repeat.

    Been awhile since I ordered some mudbugs but what I did and it was good and alot of it!

    I just steamed them Zatarain's crab boil, Cooked them about 1/2 way
    Then in a big pan I finished them in some white wine and Garlic.

    Then Just have a bunch a melted butter with a little lemon on the side. I bet it would be good with clams and mussels too. [:p]

    Mighty fine any way you do it. I always figger if it a good way fer shrimp, it twice as good fer crawdads. Use any shrimp recipe.
