They most certainly do, tin. If we're sad we leave little clues in our speech to see if anyone is paying attention, to see if anyone cares. Rodney has it right.

The exception is....when I say "I'm hongry", that reflects more the condition of my stomach than my heart

Not much to go on here so this is what I think. I'm assuming this is a medical question so I believe that your blood pressure best reflects the condition of the heart. But words may do the same thing if someone is slumped over cluthing their chest saying "Call a doctor I think I having a heart attack".
