I need a recipe for pickled peppers

got some peppers today.i need a pickling recipe for cayennes,jalepenos,habeneros and reds thanx walt

    Peter Piper picked a peck of pickled peppers...hmmmmm..its obvious HE didn't know how to pickle peppers either....

    If you pickle them, they arent going to be any good for putting in recipes.

    My advice: Borrow a food dehydrator, dry those babies out, grind 'em up really fine, and put 'em in spice jars. I have a Ronco Food Dehydrator I bought at a garage sale, and since I cook a lot of hot food, I use it a lot to dry peppers. I use two primary peppers: chipotle (smoked jalapeno), and habanero.

    The smoky flavor of the chipotle is heads and tails over the standard jalapeno, and the habanero (besides being the hottest pepper on earth) also imports an excellent "slow burn" effect that helps you enjoy the dish a lot more as opposed to some of the more "bitingly" hot peppers which can cover up flavor.

    When I'm making a pot of chili, for example, even I cant predict how much of each pepper I'll need. I taste, think for a bit, then add a bit of this or that. The process can (and does) go on for hours.

    Dera sub Take 1\2 C, pickel salt and 2C. vineger plus water to mix together and cover, soak peppers over night. in morning, in pan Cook 1\4 C. sugar and 1 gallon cider vineger,5or6 onions sliced 1tea. cloves, and 3tea, mustard seeds, 2tea tumrric,1 1\2C. hot sauce 2Tlb.salt ......This makes a Brine to pour over the [Rinsed from last nights bath] Peppers. In HOT jars,Fill the brine to the top, Quickly screw on lids, and set up side down on towel. leave for 1 hour tip back up to see if they have sealed.
    If not wait a while longer for them to cool. If after several hours, they still aren't sealed putall the jars lid end up on a cookie pan in 400* oven for about 15 min. and cool all over again. Hope yours turn out. they will be spicey! I do this for cucumbers and onions and carrots and vedgies. they dont stay on the shelf long..........

    Another thought is If you just want to save them for later get a needle and thread and gloves [ the juice can burn your skin and eyes if in contact] and thred each peper just under each cap and hang in a dry place. it will look like a sharks tooth neclace but when dry they will shrivell up but this is when they are ready to use. the seeds will be very potient. so a little may go a long way.You can keep these as long as they are not dusty or mildew.

    Wow Sub. you beat me to it. I went to my brother's today and
    got a 5 gal. bucket nearly full of Jalapeno and Habanero pepper.
    I was going to check for a recipe for pickled peppers after I
    checked the forums!!!!!!! Boy, am I glad I checked here before
    I did a search. I will be busy tomorrow!!!!!
