Chili Recipes Please

My wife doesn't like chili that has beans in it, therefore she won't make any. I haven't had homemade chili in years so I bought a big pot yesterday so me and the kid can make chili. Anybody got a killer chili recipe?

    Four cans of Dennison's and a can-opener.[:D]

    All I can suggest is that you use white beans, not the kidney bean, too sweet. Red pepper and cumin will make anything taste like chili.

    Saute some good lean ground beef or cube cut round steak in onions, garlic, salt and pepper. Add beef stock and re-hydrated beans. Simmer for three or four hours and don't be a'stirring all the time.

    You can't make bad chili so just experiment.

    Once you have the chili made; cook a pot of white rice. At serving, mix the rice and chili about half and half in a bowl. Mix in shredded cheese to taste. The heat from the chili and rice should melt the cheese. Now that is some good eat'in.

    My favorite chili has to have beans at the least but if it has black beans, so much the better. Also, consider that a lot of cooks use a little powdered chocolate (not sweet cocoa) in their recipes. Or you can use a stout beer with a bit of chocolate in it as liquid for the chili. Dark beer or stout adds a lot of flavor to chili and the alcohol cooks off.

    There are lots of variations and a quick search for just the term 'chili' will keep you busy for hours.

    For a giant batch of chile take two cans of each type of beans you like kidney beans, chile beans, two cans of tomatos, one pound of beef
    one pack of chile mix, one and a half cups of salsa, one can tamato soup with one can of water, 1 cup onion, chopped . Best the second day after everything has set together.[:p]

    I have found that people that do not like beans mean kidney beans. I substitute pinto beans for the kidney and seem to satisfy everyone.

    I had chili once that was made with chicken and black beans...It sound's nasty, but it was REALLY GOOD. Wish I got that recipe.[:p]... I pour my chili over elbow macaroni and dump chedder cheese and oyster crackers on top [8]

    My family has been making this recipe for over 40 years. We usually devote a complete deer or wild hog to chili and cook up a whole year's supply at one time. It's always a favorite, especially in cooler weather.

    TEXAS RED CHILI

    6 lbs. Meat (I prefer to use deer or wild hog)
    4 oz. Olive oil
    20 cloves garlic
    6 teaspoons salt
    2 tablespoons sugar
    9 tablespoons chili powder
    2 teaspoons cumin
    2 teaspoons oregano
    2 teaspoons cayenne red pepper
    6 tablespoons paprika
    6 tablespoons flour
    12 tablespoons cornmeal


    (Note: Adjust the "heat" with the chili powder and cayenne red pepper. Using only 6 tablespoons of chili powder and 1 teaspoon of cayenne red pepper makes it where the less adventurous can eat it.)

    Heat olive oil in large pot until hot; add meat - stirring constantly until gray (not brown). Add 2 quarts of water. Cook at a bubbling simmer until done (1 to 1-1/2 hours). Add all ingredients except flour and cornmeal. Cook 30 minutes at same temperature. Mix flour and corn meal with 1 cup of water then add to chili, cooking 5 more minutes. Add more water for desired consistency.

    Rafter's chili recipe is pretty close to mine. cept I don't use flour and I use a little more corn meal. Proper chili doesn't have beans.

    When making chili I also must make fresh corn bread. Usually I'll add shredded sharp cheddar cheese into the batter before making the bread. The first day the corn bread is used to mop the bowl clean. After that it's broken into the chili like some people will add crackers.

    6 or 8 red chille pods(Hatch or Las Cruces NM chille),place in blender add water half cup or more.Add fresh garlic cloves maybe two,and blend until smooth.Place in pot boil for ten or fifteen minutes water can be add to for desireded consistency.You now have chille.
