I was hesitant to post my recipe on the internet but I know it'll be safe here and y'all won't tell anyone. So, here goes...
Ingredients:
1 to 2 pounds of your favorite ground meat.
1 large block of Velveeta(32 0z.)
2 cans of Rotel. I use 1 original and 1 mild so it isn't too hot.
1 can of corn
1 can of black beans
1 packet of Taco seasoning
Brown the meat and drain.
Add Taco seasoning as per packets' instructions.
Stir in Rotel, beans and corn, over medium heat.
Cut Velveeta into 1" chunks and add to mixture, stirring constantly to avoid burning. It will melt in a few minutes.
Serve with tortilla chips and enloy. Place in crock pot to keep warm, if outdoors or in a cold area.

have to try that next football season. When I go to bed that night, I promise to pull the covers over her head[:X][xx(][xx(][:D]
It won't hurt you(or her) too bad.[;)]
..Rotel and Velveeta will make anything great. I'm not a chip & dip person, but Cathy thinks that sounds great! Thanks Todd...Oh yeah...she can duplicate Rotel with home-canned maters but I don't know how.
Yes, they do Dale.
I'm not a big chip/dip person myself, but this stuff is great. Pretty much a meal by itself.
Should be real good with your wifes' 'maters. May have to adjust the heat to your liking...
But Velveeta ain't cheese.

Yea a big * one [:D]
okay okay a few green onions...
Made mine last night. Rotel isn't kidding when they say "hot". I also added diced onion and next time I'll add some hot Conecuh sausage. This stuff isn't bad for you is it?
LOL, yes, that is why I use the mild and original.
I've used beef, sausage and chicken in varying combinations and have not found a bad one yet. I have also added onions, green peppers and other things, but I like to keep it simple and this is the basic recipe that everyone keeps requesting.
Anything that tastes this good cannot be bad for you, right?
So, how did you like it, other than being too hot?
I can testify to the awesomeness of BigT's dip. It jes' don' get any better!
Thanks! I didn't see this before.[^]

That has to be smoking hot.
How about a little shake of ghost pepper in it..
You first!
I loved it. It wasn't too hot - I like highly seasoned food. It's just that many packaged items that call themselves hot really, to me, aren't. Sure it's all a matter of perspective. I never heard of Rotel before and found it available at my close-by store. Thanks for your post.
Glad you liked it Jeff and thanks for the feedback.
I did the best I could.
Minus the corn I have been making this for some forty years, and have been eating if for even longer...[;)]
It used to be on the side of every can of Rotel, and inside a box of Velveeta.
Now they make Mexican flavor Velveeta, and it's even better...[:p]

Thanks TS. Yes, the basic recipe(Velveeta and Rotel) is still on the back of Rotel cans. I just added the other stuff.[;)]
I made the last batch with the new Velveeta Queso flavor and it was very good.
The possibilities are nearly endless and one can tweak the recipe to their liking, adding whatever spices, meats and vegetables they prefer.
It has really been a hit at parties and get-togethers around here.
