Wife made liver for dinner tonight....

I think it's the first time I've eaten liver while sober (17 years)! The taste was as I remembered it, actually enjoyed it. It's the "after taste" I had forgotten about. I've tried Crest, Colgate, and Wrigley's with no luck. I even broke into the Halloween candy (seemed like as good an excuse as any) and the after taste remains. I know the scent is still strong because the cat keeps trying to kiss me.

I like it battered and deep fried with plenty of onions and bacon. Its a southern thing. Sometimes though I just can resist gnawing it raw and sucking the blood out. Its a neanderthal thing.

Cube pork liver. Fry liver in vegetable oil with garlic and scarlet onions on medium heat. Pour in two cups of coconut milk. Cook over medium heat for 5 minutes. Stir in one can of curry paste. Pour in 1/2 cup water. Boil for 30 minutes. Add egg plant. Add pepper, basil, bean sprouts and fish sauce to taste. Serve over fresh rice stick noodles.

My favorite way to serve liver:

    Liver pate'

1 1/2 lbs. liver, boiled, drained, cooled
    1 large onion
    1 can black olives
    6 hardboiled eggs (without shells)
    1/4 cup mayo
    1/8 cup mustard

run the first 4 items thru a grinder, mix with mayo & mustard
serve with crackers or chips as a dip or use as a sandwich spread

I just love it with onions, bacon, and mushrooms! Too many people over cook it (especially beef liver) and it comes out like the sole of a leather shoe. Calves liver is my favorite.
