Maple syrup time

The sap is flowing and many hard working families in our area of the Appalachian Mountains continue the family tradition of producing pure maple syrup. The thought of pancakes, eggs and fresh sausage with an abundant coating of pure fresh maple syrup for breakfast in the morning could make for a restless night here. If you've never tried anything but Aunt Jemima you are really missing out on the taste of real syrup. Sadly in our area I could see the tapping of trees and making maple syrup tradition come to an end in the future. Anybody else got their fresh batch of syrup yet?

    Good weather for the sap to flow up here in upstate New York on the Vermont border[:)] The past few weekends there have been many pancake and waffle breakfasts at the local fire departments.

    Sadly I don't like the flavor of maple syrup, but my better half hauls me along anyway....at least I can get eggs with venison sausage.. [:p]

    Our cabin sits on an old maple syrup farm. When I bought the property, we found an old shack that they used to process the syrup. I also found a lot of old buckets that they used and tools. We call our shooting range, "The Maple Shack Road". We even had a street sign made up with that name. I tried to spike a tree and get some syrup, but must have doing it wrong[}:)] I got the spike from an old farmer and found a nice maple tree, but only got a little out of it. I know it takes some time, but I was growing a full beard and only got about a pint out of the tree. I also found two old cow bells back there. I got some of the buckets and the bells hanging up on the wall. The tin roof of the maple shack is still back there, but the frame and the rest of the structure are long gone. A bear was living under it about ten years ago with her cubs. The tin is covered in moss and leaves now. I am just going to leave it there as a reminder of the past.Oakie

    I do not like the flavor of it either. I will take Aunt jamima any day.

    I'll be gettin' some. Mine might be Garrett Co., Preston Co. WV or Somerset Co. PA. When we want to go somewhere and do something fun, we go to that general area and they're always selling Maple Syrup. I don't mind the price either. I just hope the producer's making the money instead of some middleman.

    We have a maple farm near here. I went down to Virginia Beach last weekend and took maple syrup to my kids and maple sugar candy to my grandkids. They all loved it! [:)]
