Venison Breakfast Sausage

Need to use up some older packages of venison. Tried the recipe from the Joy of Cooking cookbook for pork. Used 3 parts venison and one part ground pork. Not bad but could be better. Might have needed more pork fat than pork.

What's the recipe you use?

Thats a good mix but you need some pork sausage spices. Easiest and probably best way is to buy a pre mix out of any on line sausage cataloque.

Sorry. I did use a variety of spices (marjoram, sage, salt, cayenne pepper, black pepper, etc.) Grew the sage this year.

I use one third pork.

Just bump up the pork ratio, that will make it closer to what you want. I use 60 pork and 40 venison.

I use one part pork fat and 4 parts venison.

Appears that I messed up by using ground pork (too lean). Just got back from buying fat back, two packages of corned beef (entr?e, sandwiches and hash) and 10 lbs chicken leg quarters (for smoking)

Why not just have pork sausage for breakfast and deer burgers for lunch?[:D]
