Damn I miss the REAL charcoal fired grill. Went to gas 15 years ago, much easier BUT just not the same flavor[xx(]

    I had the same problem until I got a radiant heat gas grill last summer. Through wood chips of various types on the catch pan, and you get a smokey and as they overheat, even a char type flavor.

    I get a good smoke and smoke flavor by throwing some wood chips (wrapped in aluminum foil) on the grill while I am cooking.
    Some will die in hot pursuit
    And fiery auto crashes

    My indirect smoker/grill rules the BBQ world..
    BTW: It's totally possible to light charcoal without using the "diesel/lighter" fluid.
    I have what in the bbq world is known as a "chimney"..U put newspaper in the bottom,charcoal(only the best.hardwood coals or KINGSFORD.)
    I usually pick up all the oak twigs laying near the grill and pile coals on that and light it.
    ANYONE that is using a GAS GRILL is either lazy or just don't care...

    We went to the green egg. Still have the gas grill, but i like the egg better. the food just tastes so much better. Oakie

    My "chimney" for lighting charcoal is a 1 gallon tin can, a bunch of holes in the bottom made with a church key. Newspaper in bottom good charcoal on top.

    Add prunings from our apple trees if you like applewood smoke.

    there is an apple tree, neglected for generations at the far end of my lot. the base is a good 18-20 inch diameter. there is my smoking wood supply! beef goes on the gas grill to sear it and cook it fast. all other, chicken pork and fish goes on my Charbroil charcoal grill/smoker unit.

    Charcoal only at this ranch, I use an electric starter and use small fire wood under charcoal. When the fire is going good I remove the fire starter and place grill top
    on and pre heat for ten minutes, no mess no smell/taste of starting fluid. You gas guys are just kidding yourselves that the food is as good, never!

    Don't use lighter fluid. Use a starting chimney with newspaper in the bottom. Works a lot better.
    My grill has a grate for the coals, I just stuff some paper under it, drizzle a little cooking oil on it, pile the charcoal on top. Much better and quicker than starting fluid, and no taste or smell. My gas grill hasn't been used in years.
    I give Alton Brown credit for starting the coals with cooking oil, saw him do that years ago. I have used charcoal ever since.[8D]

    I cook my steaks in the toaster. The juices soak into the bread crumbs and pop tart pieces in the bottom and when optimum temperature is reached the smoky flavor from the boo boo berry pop tart crumbs give an excellent flavor.

    I still use lighter fluid.....I just ensure I use really pure stuff....I leave the grates off until the charcoal has burned all the fluid off and is good and ready.....then I throw the grates back on, close the grill aND let them heat up....then put the food on....start to finish is about 15 minutes...and I only use lump charcoal.

    I should have kept a list. I am now trying to remember the different version of GB snobbery we have witnessed.

    There was the Which-brand-of-Mayo-is-Best-and-all-the-others-suck-the-Big-Root, one about pickles, another recently about chili, now this one about how one applies heat to a piece of meat....seems like some others I missed.

    My smoker finally rusted out and I went back to gas. The unit I picked however has a charcoal tray so I can get the best of both worlds!

    Excellent idea. Only problem is that you cannot use a full thickness steak.

    When it is too cold outside to use the gas grill, we will usually just boil the steak with egg noodles. There is nothing better than egg noodles infused with the grease from a USDA Ultra-prime-choice piece of beef.

    I can see how the egg noodles would be pretty tasty. It is also possible to cook a steak in the microwave, and then any leftovers can be used to resole boots.

    I wouldn't touch a microwaved steak with a 10 foot pole.

    Unless of course it was topped with two asparagus spears and drizzled with a light b?arnaise.

    My old bachelor uncle used to broil his steak in a toaster oven. That was some damn fine steak. But maybe, it wasn't the steak that seemed so good, maybe it was just his company.....
