Country style are not really ribs. They are cut from the rib side of a loin.


I like spare ribs myself.

That said Country style ribs when cooked properly are very good.

i prefer the "st louis style" ribs myself, less waste and inedible pieces.

Baby backs are good and meaty, but like they say the sweeter the meat the closer the bone[;)]

I will take St Louis style cut ribs. They are just more traditional to me. Baby Backs run a close second for me.

Either way I have a hard time turning up my nose to any well smoked pork Rib[:p]

St. Louis cut.
Put enough salt to scare most men then enough pepper to cover the salt. Pecan smoke for 3 hours then a little butter and raw sugar and back on the smoke for another hour.

Probably should not even mention that ribs are not at all my favorite, compared to a medium cooked beef rib eye!![:p] Or what I used to call a thick Delmonico steak!

My parents were teenagers during the Depression and had some ingrained attitudes about certain types of food. Ribs, pork belly(as opposed to actual bacon), brisket were all considered "poor folks' meat" and the stigma has hung on with me. I wouldn't pay for such "low class" stuff. Grouch Attack drags home boxes of mis-cut ribs and cooks them. I eat only as much as I need to get along but consider it about like eating fish bait.
Dad had an Army buddy who lived in Arkansas. He called ribs and brisket "ni66er meat" and wouldn't eat it if there was an option.
