    I've been doing meat over chunks of fruit-wood, like almond.

    I'll throw some small pieces of wood into a large tin, get it going, and then add a handful at a time, of small chunks cut from standard dried chord-wood.

    Throw a grille over the tin, and lay on the boneless thighs. Season with all-spice, turn frequently.
    It cooks at a lower temp, and the smoke of the fruit hardwood imparts a fantastic flavor.

    Down to embers? The best time. Throw on a couple more chunks of wood. Just enough to smolder and smoke away. The food will get cooked eventually.

    I've done chicken, tri-tip, strip steaks, pork chops, and even a few hot dogs this way.

    Same as every season: porterhouse steak, medium rare, no garbage on it. Although, for summertime-only favorites, probably a good juicy burger is more portable.

    Fillet or ribeye on the grill. Venison fillet too, when I have them. All gone already till fall.[:(] Sweetcorn on the grill is awesome too. Few more weeks and the farmstands will have it.[:p]

    I feel for you guys that think cooking on the grill is limited to summer time. I cook outside a lot more often in the summer, but it certainly isn't limited to warm weather.

    A Jalepino and cheese smoked sausage grilled to its light crisp perfections then placed on a fresh sour dough wheat hoagie bun. When you bite into it, you get that right off the grill snap of the casing and the cheese and juice sprays down the front of you and everyone else in a 2 foot radius. But do you care about that...HECK NO...because you're a MAN!

    Next time there is a 4 foot snow drift and the wind chill is about 25 below, I'll giva ya a call and you can come throw some meat on the grill.[:D][:D] I do use it in the winter, but it is limited.
