I have a metal one. It was actually given to my by my mom as a joke for Christmas the Winter before I started the build.
Once I had it done, I decided to try it out. I flattened it (ran it over with my truck) and it's worked great since.

However, I use crisping screens under my pies. It keeps it off the residual ash on the bed of the oven.

All that said, I think Metal is frowned upon for a risk of chipping edges of the firebrick floor. If your floor is perfectly level, it should not be an issue. I will probably go to wood next, mostly for the feel and nostalgia.

Parchment paper. It'll slide off of wood or metal.
i use parchment paper a lot, it does not hold up well at 500+ degrees
I use it a lot. I'm not sure what it'll take for heat but if you trim it close I don't see why it wouldn't do fine. By the way what will your oven surface be when you get it finished. And aim this be the type where your heat source is next to your food as it cooks
My oven will hit 1000DegF. That parchment paper isn't going to take that.
