I found a video on skinning squirrels on a favorite site of mine.
This is not the technique I learned to skin 'tree rabbit,' but it
seems to work really well! ... pretty slick!

I also added the features the sothere does.
...kosher salt,fresh cracked black pepper, few onions...cover with bacon strips, cover with foil...bake at 350 for an hour, dip in milk egg, flour & throw in hot oil till just browned...mmmmmm!...[:p]
With the attitude the squittles have 'round here..huntin 'em is a real challange

Skin and clean 2 squirrels (3 if small)
put the beasties (cut up to fit) into a crock pot with 1 cup red wine, 2 cups water , and salt and pepper
Cook on low for 8 hrs. Strip meat from bones and return to stock.
Then put 2 quarts water, 1 head of bok choy(leaves seperated), 5 nice potatos cut up, 1 cup sliced mushrooms, 1 large onion cut up and about 1/4 tsp * into a soup pot with a 4 quart capacity. Cook soup base for about 45 min.
Add the squirrel stock.
Heat thoroughly and enjoy.

That looks like a pretty good way. It's been a long time since I've been squirrel hunting, but as I recall I made about a one inch cut across the back, and inserted the tips of the first two fingers of each hand between the skin and the meat while grasping the outside of the skin with the thumbs and yank quickly in opposite directions, then snip off the feet, tail, and cut the neck through and gut. This method is fast and requires no bending over or skinning of any degree.
