DO you have a signiture dish?

My dad is wel known for his chili. He makes it from scratch (takes like a week) and it is to die for (not of) just hot enough without being cruel, the meat is simmered roast that melts in your mouth and he uses 3 different beans. yummy.
My sister makes the best lasagne (for a non Italian) it has big chunks of italian sausage, ground sirloin, at least three cheeses plus cottage cheese instead of Ricotta and is topped with a crispy crust of asiago topped mushrooms, broiled to finish.
Mom makes swedish meatballs on home made pasta the sauce is creamy and the meats perfectly seasoned (combination of veal and beef)
I make Beef stroganoff and I use trimmed rib steak for the flavor plenty of sour cream, I like mine better than any other I have ever tasted I always serve it with asiago cheese bread and a ceasar salad. the flavors melt like a symphony of sensations on your tongue

what do you make, that is so good, when people taste it they encourage you to open a restaurant? (and whats the recipe?)[:D]

    Beer battered catfish.

    Unfortunately, there ain't no recipe. Don't think I've ever made it the same way twice.

    I think some of the best foods there is no recipie for. I make a mixture of portabelos, onions, and a little bit of garlic. Season to taste, olive oil in the beginning and then about 4 tble spoons of butter at the end. Guys go nuts for it when i throw it on the grill.

    I was hoping for a little hand up from my culinary rutt...cooking for myself makes it easy to fall into a pattern, I definately don't want to start eating out every meal.
    I like to spend a day or two during the week when I cook then i put stuff up for the rest of the week and beyond (in the freezer)

    I make a few things that are pretty incredible.

    The one I'm known for, though, is apple pie. Family recipe. No, you can't have it.

    Here's a marinade for grilled chicken that I just thought up on Saturday, and made for my wife for Mother's day lunch:
    1 part Frank's Redhot Buffalo Wing Sauce
    1 part Italian dressing
    (can adjust proportions to taste)
    marinate chicken for 12 hrs or more.
    Grill on aluminum foil.

    mmmmmm.......

    My "mexican" cornbread is awesome. I'll see if I can find the recipe to post here. It's more of a meal than a bread, though. Add some browned ground beef and some queso (cheese) sauce and it's a whole dinner. Making me hungry just thinking about it.

    Mexican CORN Bread
    2 cups Corn meal
    1 cup milk
    1/2 cup cooking oil
    3 eggs
    1/2 tsp. Baking soda
    1/2 tsp. Salt
    1/2 tsp. Cumin powder
    1/2 tsp. Chili powder
    1/2 tsp. Garlic powder
    1 can cream corn
    1 can whole kernel corn (I've also added shoe peg corn for variety)
    1 can hominy
    1 Large Onion chopped...some chopped green onions add color, if desired
    3/4 lb. Shredded cheddar cheese
    2-4 chopped jalapeno peppers
    Mix all ingredients except peppers and cheese. Pam (cooking spray) the cake pan. (9"x12" glass or metal)
    Pour in half the mixture. Spread cheese and peppers on top. Add balance of mixture. Sprinkle lightly with additional chili powder for color.
    Bake about 1 hour at 350 degrees.


    For the Queso sauce, I use the recipe on the box of Velveeta--with Rotel tomatoes or Pace Piquante salsa. Be creative. That's how I came up with this recipe which started as my Mother's basic mexican cornbread and I made it into a main dish.

    BBQ'd Tri Tip-Santa Maria style--I am sure there are folks on here who have never heard of it but I suppose it is similar to brisket. Pair it with some good chili and an ice cold beer and you have one heck of an afternoon.

    Actually, I think everybody tells me mine is the best, because I'm stupid enough to buy it, and end up sweating over a smoker while they are all inside the AC laghing at me, and drinking my booze and eating my food. [}:)]
