The only Bologna I will eat is Ring Bologna. Have you ever heard of it???? Most people have not. I think it might be just a Tristate thing here in PA/NJ area. It is like a lunch meat. I will try to post a picture.

It seems to be a German thing, the Amish in Crogan NY make some of the best ring bologna I've had.

I grew up eating ring bologna in Michigan...still love the stuff but hard to find. Publix here in FL carried it (Boar's Head) until very recently...no one there can/will tell me why they dropped it [:(!]quote:Originally posted by Oakie

Many photos of "Ring Bologna" on Google. I remember it from my childhood in NJ. I always liked the Garlic Bologna. It kinda looks like Kilbasa.

I do not know about smoked bologna but I like it pickled. Here is the Kogel store bought stuff that is pretty good, but not as good as the homemade that I make for deer season.

Tried it with mesquite and some St. Louis rub. It tasted like ham!

Next time I'll go with hickory and skip the rub, the rub seemed to take away fro it rather than add to it.

I agree, ring balogna would give more surface area for uptake of the smoke flavor.

Maybe I'll use that next time.

I guess this is a thread for the "parts is parts" crowd.
Some will die in hot pursuit
    And fiery auto crashes
Some will die in hot pursuit
    While sifting through my ashes
Some will fall in love with life
And drink it from a fountain
That is pouring like an avalanche
    Coming down the mountain

You have to do something with the stuff when you clean the butcher shop floor.

My husband grew up in Iowa and he ate ring Bologna. Coming from Kansas I had never heard of it.
Sent my son the video on Smoke Bologna and he said a friend had just told him about it. So he's going to smoke some!
