The only Bologna I will eat is Ring Bologna. Have you ever heard of it???? Most people have not. I think it might be just a Tristate thing here in PA/NJ area. It is like a lunch meat. I will try to post a picture.
It seems to be a German thing, the Amish in Crogan NY make some of the best ring bologna I've had.

I never could find rolling paper big enough to smoke bologna.
Next time I'll go with hickory and skip the rub, the rub seemed to take away fro it rather than add to it.
I agree, ring balogna would give more surface area for uptake of the smoke flavor.
Maybe I'll use that next time.

You have to do something with the stuff when you clean the butcher shop floor.
