Knife Question

I was given a Gerber Harsey Ranger knife. For those of you unfamiliar with this model,it is a liner lock style, metal handle and has the little knob at the back of the blade to assist in one hand opening. I know very little about knives, although I have carried a pocket knife for 55 plus years, so my question is this; I showed it to a fellow who seemed to know a bit about knives and he was opening it one handed by initating blade movement with the little knob then flipping his wrist to open the blade fully. Is this correct practice? It seems to me to be akin to flipping a revolver cylinder shut with a twist of the wrist. I find his method of opening handy, but certainly don't want to dammage the knife and appear stupid at the same time. I use this knife probably a dozen time a day so it gets opened and closed a lot.

I am still useing the same Buck 112 folder That I have had for years.
I sharpened it before hunting season this year and gutted 2 deer and caped 4 and helped skin 4.
The blade is still sharp enough to skin another deer and maybe more.
I have yet to find a better hunting knife with a blade better than the old Buck 112.

Are the new ones still good quality?
If so, how do you achieve that kind of finish on steel?
