Diabetic Type II - Rice Cooking Method

I assume we have about 20% here with Type II. Or just worried about carbs, huh?

A Sir Lanka researcher found that if you add coconut oil to the boiling water used to prepare rice, then set the rice aside to cool and keep for 12 hours, there is a molecular change to the rice resulting in a very large reduction in carbohydrate uptake.

    interesting, particularly since I like both rice and coconut oil.

    Me too,and also spaghetti. Just use more olive oil and it will be great reheated in a closed microwave container the next day.

    I wash my rice first then say place 2 cups in about a gallon of water.
    Boil the crap out of it for 15-20 minutes or so uncovered. When done empty the rice into a colander and rinse again under hot water. Then eat cooking it this way gets rid of 90% of the starch. What ever you don't finish throw in the fridge to make fried rice the next day or so. Cooking this way also keeps the remaining rice in the fridge from clumping up.

    I Never worry what I eat.
    I eat my jasmine rice as soon as it's sat off heat for 10 min.
    That stuff smells so good cooking,(like popcorn)no way can anyone wait to eat it..[:p]
