....tomorrow! And some of the best corn bread this side of County Cork!....Wearin the "Green"...My wifes clan is the O'Duffs....I'm just a shanty Scot and Creek Indian...

    Love corned beef but can't have it because it wont go with Golitely diet tomorrow for Thursday's scope job.

    WD, you most certainly did well for yourself. Miss Vikki is a wonderful lady, and beautiful to boot.

    You are many things, but I don't think beautiful is one accusation you will ever be convicted of. [;)][:D]

    I just put the corned beef in the slow cooker with the potatoes. The cabbage and carrots will be steamed later today.
    A couple of bottles of stout are already chilling.[8D]

    We are on our way to march in the Kansas City St Patricks day parade.Then on to Westport and Kellys for some adult beverages,then to friends house for more,then home where Boyles corned beef is waiting.

    Shouldda just put the carots,those taters will need to be re added with the cabbage.

    I used a couple of Russetts instead of reds to absorb the flavor and take a bit longer to cook. Just finished dinner and they were delicious. Had to still add a wee bit'o salt though.

    Publix had really nice eye of round corned beef instead of the usual brisket. Mine has been in since about 8 this morning. Really smelling good now. Put the taters and carrots and cabbage in around 2. mmmmmmmmmm

    My families are more Scotch than Irish, but we never shy away from a good excuse to party.....

    Corned beef and cabbage aren't Irish, either. Nobody in Ireland ever heard of the stuff. It's an American dish through and through. Don't take my word for it - look it up.

    So, there's really two parts; the 'heel' and the 'flat'. I assume you are referring to the 'flat'.



    While, yes there are multiple cuts of brisket.

    The eye of round comes from the other end of the cow.

    Generally we use the eye for "roast beef" and the brisket for Texas style BBQ.... Both however make a great corned beef. When using brisket on the smoker I prefer to use the whole brisket.

    I'm American,but we eat it several times a year...and especially on St Patties DAy!
