Why is it if You leave milk out it will spoil & get really nasty ? But You can leave butter (in a butter dish) out and its OK ???

Very high in fat and with negligible water content, butter is not attractive to bacteria. If it is salted, even less attractive.

Unsalted butter turns rancid fairly quickly if left out of the fridge.

Salted butter, not so much.

Also, Honey doesn't go bad ever...They have found jars of honey in Egypt that are 3000 years old...it was still edible.[?]
