Paddlefish are caught by snagging. They are filter feeders and don't bite lures or bait. Releasing one successfully isn't usually possible.

Their roe is very valuable, but the meat s vapid.

I have released many of them. They are very tough fish. I have dressed a lot that have been released before you can see the healed scars. The meat is very good fixed many different ways if properly cleaned no red meat left on it. They have no bones just like a shark. In MO they don't reproduce in the wild. Due to damming rivers, they need clean riffles for the eggs to survive. They take about 12-14 years to reach keeping size here, 34" from the eye to the fork in the tail.
