Sometimes I get a hankering for a dish and nothing else will do. I awoke from a sound sleep with just such a hankering.
It's 0300 on Sunday morning and I just finished making West Indies Salad for tomorrow (today). It has to marinate a few hours so it will be ready around lunchtime.
Like oysters and seafood gumbo, I've eaten this since before I can remember. It originated in Mobile after WWII and my father loved and made his own also.
I modified the original recipe to my taste by substituting garum (fish sauce) for salt and rice vinegar for cider vinegar.
If you like crab, this is about the most quintessential crabmeat dish there is.
