Anybody got a good pheasant recipe? We got invited to a bird shoot at one of those high end preserves yesterday. I've got about a dozen birds and have never cooked one.Any suggestions?

Bake it with veggies and little water and keep it moist by basting with it's own juices.

I simmer it with some wine and mushrooms. Delicious. Any recipe you would use for chicken or rabbit works well with pheasant. Just be careful when your chewing....birdshot will reak havoc on the dental work[;)]

Just breast 'em. Cut those into 3-4 strips. Roll 'em in flour, then egg (a good farm egg if you can get'em) and flour again (or bread crumbs if you prefer) Fry em'up. Take the dripping and some few pieces and make up a batch of white gravy, salt and pepper to taste.

Make a cake pan full of bisquick biscuits. Take a couple on your plate. Pour the gravy over the biscuits, fry an egg for dippin biscuit/pheasant strips, enjoy......[:0][^]

Young birds can be fried if you wish.

Here is one way that is always good young or old birds, doesn't matter:

Prepare crock pot with french onion soup. Season and fry pheasant just like fried chicken. Remove pheasant from skillet and place in crock pot with the onion soup. Stir a little flour into the skillet drippings like you were going to make gravy and add this to the crock pot with the rest. Let cook until it thickens up and serve over egg noodles or rice. Season to taste. Serve your hot bread of choice and what ever else sounds good to you.

I miss pheasant[V]. One of the very few things I miss about Illinois.

I used to have mom make some homemade stuffing, put a little chicken spice on the meat. Put the breast on top of the stuffing and cover. I just don't remember how long to bake it for.

I tried it myself once and forgot to cover it. Like chewing leather.

Man oh man; haven't had any pheasant since Korea. Used to bring them back to base and turn over to the crew at he club. The Koreans would skin them out cut them up and fry them and each week end we had fried pheasant at the NCO Club.

    For GOD and COUNTRY

    Not as Lean[:D][:D]Not as Mean[:(!][:(!]But STILL a MARINE[}:)][}:)]

If you can do it with chicken you can do it with pheasant. Cut it up in chunks, batter it, & deep fat fry it. Then invite some buddies over & let the feast begin.

Heat up the bird in a frying pan. Do not finish cooking it!

Place the bird in a crock pot with Campeblls cream of mushroom soup. Let it cook in the soup until the meat is compleaty cooked.
Serve over wild rice, or any rice of your choosing.

This is one of my favorites, and it works well with Grouse too.[:D]
