I'm thinking a smaller, younger one is in order .

the mrs is OK with the idea, but doesn't want to be involved.

there's some pigs available locally

anyone here done a pig?

    The last one my neighbor did came out great. He cut deep slits all over the thing and filled them with garlic cloves and other seasoning. He then took smoked sausage and stuff the inside then sewed it up. It cooked on a spit over open fire/coals for hours, I think it was like 5 hours. It tasted so good and the old guy from down the street even took the head and feet home![:D]

    Back in school we had a frame of angle iron and expanded metal and would flip it 2x an our or so and cook it all night. We had an old lady that was the cook for our house and she would pick it and make all the fixins, usually the best party of the year. My old neighborhood we would do a whole hog for the 4th, it was always a great time. Allatoona Yach club generally has one on the 4th, and we usually sponsor the fireworks... Hmmmm need to look into that...

    BIL does one every year. Size depends on size of the crowd. This year will be about 35 people or so, pig is 95 lbs dressed. He rigs up a redneck cooker in his yard out of tin & some way to turn it, then gets the grandsons to stay up all night with it (to pass the knowledge of how to do it, of course). My job is to bring the baked beans. Can't wait, it's always good. Only problem - BIL likes red weenies, so every time he cooks he cooks a bunch of them, too. What a waste of perfectly good heat!

    We roasted one last year. This is a 125 pound pig on an oak spit.
    Stayed up all night to cook him. Takes a lot of wood.

    It would be nice to have a motor driven spit. I have roasted 9 pigs and have never had a motor.
    We just use home made oak spits. Roast him on one side for 30 minutes, then flip him to the other side. You need a separate fire pit, you burn the oak down to coals, then shovel the coals under the pig. Get the pig about 12 inches above the ground.

    Works a lot better if you have a masonry surround for the pig. We used rocks, they look better, but concrete blocks work fine.
    This masonry absorbs and reflects the heat, makes an oven.
