Watch the oil as stated above and watch when you dunk the bird when hot as it will rush over the top and you have a fire that may burn the place down.[:(]

Frying works best on smaller birds. Say, 14 pounds or less. Anything larger and you run the risk of having an undercooked center and burnt exterior.

Easy way to determine the amount of oil you need.First put the bird in the empty pot,add enough water to cover the bird,and mark the water level with a line.Then pour the water out,dry the pot and put in oil up to the line and fire up the burner.Fried turkey is the only way I go anymore.I inject some cajun spiced marinade and you talk about good.[:p]
