if you ever have made rye bread you know how extremely difficult it is to work with, very long rise and typically turns out dense as a fudge brownie, i got perfect oven spring out of it
this is my very own recipe, soft and creamy texture , plan on getting Anise, Fennel and Caraway Seeds for the future

after autolyse i only fold 1 time every hour, bulk ferment in the fridge overnight, let warm up fold once more and shape
Pumpernickel is at the top of my list and being dense in my view is part of what I like about it and the "In your face taste" is the other.
Your a gifted bread maker and that Sir is no small feat.
