The only Concession I make to Convenience is a Chef's Choice Diamond Motorized Lap.
fork out for a lansky, novice or pro can use them with consistent results, i use one to keep the angle i want, then finish off with a leather strop i made

I have used countless "sharpening systems" but this diamond embedded rod is just the best.
The trick is to sharpen the knife at two angles. one thats about 15deg and then do it again at 40.
knife a microscopic serated edge.
There is NO SUBSTITUTE for patience
and a good whet stone.
I was sold and bought one on the spot.
It won't repair a damaged blade, but it really does work very well.
It also allows you to sharpen scissors pretty well.
