Personally, I have to go with Bermuda Rockfish. Thick white filets, delicate flavor. Yum!

That's a very slick way to clean fish. Trying to fillet perch under about 9" long gets you almost no meat at all. I'll try that this ice season - and again in the Spring on bluegill and dink smallmouth.

The best tasting fish I've ever eaten is the Sauger. Back in the 50s and 60s at my Grandpa's boat dock at the forks of the Holston, French Broad, and Tennessee Rivers during January and February when the river was at it's winter level the fishermen in their boats near the dock were so congested that if you fell out of your boat there's a good chance you'd fall into someone else's boat. The Sauger came there every year at that time. Later in the early 70s they were rarely seen. Something messed up their migration and only occasionally would you catch one after the late 60s. Man I loved those fish. I wish I had some now.

In this picture taken sometime in the winter during the late 50s you can see a ton of boats at the left of the photo that were anchored right off of the boat loading ramp Sauger fishing. You just dropped a yellow and white fly (jig) usually both at the same time to the bottom and slowly drag it along or jig it up and down very very slowly. Most every one caught their limit. It seemed the colder it got the better the fishing. I've had ice clog up my reel and the eyes on the rod would be frozen shut.

In this view your looking across the French Broad River toward the boat dock. The Holston River runs underneath the rail road bridge where it meets up with the French Broad to form the Tennessee River.

Perch are excellent. We have tons of them here in the lakes and rivers. I love striper and monk fish.

They're great when they stay where they belong. A couple decades back some idiot planted some illegally in Phillips Reservoir near me. Ruined a fantastic trout fishery. Now the state has planted Tiger trout and Tiger muskie to try to eat the perch so we can get the trout populations back up.
