Cooking. Suggestions??

I've got a couple 1-1 1/2" thick premium pork chops.

Defrosting now.

Thinking, marinating in Worcestershire sauce, salt/pepper.

Add several wedged potatoes and onions.

Have 6 ears of fresh sweet corn.

I'm thinking baking @ 325? for apprx. 30 min. in a Pyrex baking dish. Add 3-4 ears of corn, still in the green.

Another 30 minutes or so.

Unseathe (sp?) corn, drizzel Olive oil, Salt and pepper on corn. Maybe some butter as well.


Checking until done. (Pork, like Chicken,) I need well done. AKA "overcooked."


Thoughts, hints, suggestions??


Wish I had some fresh Asparagus.

    Large Pyrex baking dish. Olive oil down first. Package of cheddar broccoli rice. Added required water. Four large split chicken breasts. Salt, pepper, & Goya. Can of cream of chicken soup over all. About a cup to cup 1/2 frozen peas. Goya, salt and pepper over all.

    Baking 1 hour at 350*. What am I missing, or should I add??


    Will add some heavy cream towards the end.

    Sounded good. Added about 1-2 teaspoons of minced garlic.

    Added more cream, butter, and a fair amount of roasted garlic mashed potato mix. Gravitating to a Shepard's Pie type conglomerate. Looks smells awesome. Adding more time to brown/absorb moisture.

    Dinner tonight, and lunch for next couple days at work. Mmmnnn

    Chipotle for heat; green for flavor!
    Although, the green made into sauce has BOTH.
    Just like garlic powder, the chile powder needs a little prep to make it wonderful.
    A light toasting in a dab of oil, a pinch of garlic powder, a hint of salt, and a tad of dry Meskin oregano (pulverized between your fingers), makes a great roux. Then add a bit of your favorite liquid to loosen it up to a gravy-like consistency. It gets better overnight, if you can wait that long.
    The package instructions call for flour(never put flour in your chile; it will taste like flour, no matter how long you brown it), but purists eschew additives for thickening. Arrowroot or potato starch work better & don't leave a funky taste if you don't have time to let it reduce on the heat.

    Next time you want a quick, yummy snack or a light lunch; microwave a washed, perforated potato(use a fork all over the outside to make lotsa holes), give it 3 minutes on high, then turn it over, & go another 4-6 minutes, until it's "whistling".
    Slit it down the middle & sprinkle a half spoon of green, 2 pats of butter, a little garlic & salt, then mash well. Put under the broiler until the edges brown, then remove & give a good dusting of parmesan & chopped scallions(green onion).
    A dribble of Kikkoman soy sauce, and you're good to go.

    One of my buddies is up in PA right now. "The Mushroom growing Capitol of the World." (According to him.) He is from there.

    Every time he goes up there, he comes back with a crapload of fresh mushrooms for everyone.

    He has already warned me to make space for them.

    Oyster, button, Portobello, etc etc. I always try to deydrate a bunch. Way to much to eat fresh. No matter how hard I try.

    Rocky, just so you feel better about my health, the cheddar was powdered in the rice mix. The entire dish got maybe two small tabs of margarine. Olive oil is healthy for you. About 1/2 cup of cream for entire dish also, primarily for the cream of chicken soup. It's not so bad. [^]
