those are all way too much for varmint hunting, as far as for deer unless you are making 500 yd shots all 3 perform about the same to a certain extent.

I personally would go with the .30-06spr out of the ones you named. You can get sabot .22cal 55gr .30-06spr rounds that are great for varmint. Its has the best selection of ammunition for different jobs. The 7mm Rem. Mag is a magnum cartridge, great for long range shooting medium to large game, but will kick you hard every time you pull the trigger. The .270 is nothing more than a .30-06spr case with a .27 cal bullet in it (smaller bullet, higher velocity). Its a great cartridge, but doesn't have as many options in factory loaded ammo as the .30-06spr.

ooh, now thats a really hard question, see there are to many variables. The main factor it that question wouldn't necesarily be the cartridge but the gun and the shooter. So my answer would have to be that they would be the same in general, accept the .30-06 would put a minutely bigger whole in you target. Remeber they both use the same cartridge, and you can fit the same amount of powders behind them. The only difference is the size of the bullet.I honestly think that if your looking to the varmint/deer (small-medium) game range then your a little overkill in the cartridge department. You may look into the .260rem it sounds like the perfect cartridge for you needs. Its a favorite of mine. That or possibly a 7mm-08 or .243winThe .243win .260rem and 7mm-08 are based off the .308 cartridge casing. Just with smaller bullets.I'd recomend the 6mm, 6.5mm, or 7mm size bullet diameter as a good compromize for both small and medium game. I just think that the .27 and .30cal with a -06 cartridge behind it are to much for varmint hunting.
