How are people highlighting the serial numbers and other engraved info on firearms in white ?

White paint stick(s). Most all auto parts stores carry then for highlighting tires.

How the guns are physically marked will have a great baring on how effective the paint stick markers are.

In the past when I did a lot of gun photography. I ran in to certain guns where the markings were etched, rather than stamped into the metal surface. Trying to get paint stick to highlight these markings was a waste of time. The only thing that really worked on these etched markings was very diffused lighting at right angles to the etched surface(s).

China markers aren't permanent. Paint on the other hand....

Drug store rubbing alcohol. Applied with a old toothbrush and tooth picks, is what I used in the past. Never had a bit of problem, removing the white paint.

I've done a lot of that with white model paint, a tooth pick, a rag and solvent. Dab paint into the lettering with the TP, let it sit a couple minutes, then gently rub the rag with a couple drops of solvent over the lettering until the desired amount of paint remains.

I keep a can of carb cleaner on hand just to remove that white junk from the drawing and serial numbers of M1 parts that folks love to "highlight". YUCH [:(!]

For photos I have used zinc-oxide / diaper rash cream / its white and wipes right back off . I imagine even preparation H or tooth paste ( white variety ) would also work .
