This place is called Franklin's BBQ and it is supposed to be the best in Austin, TX. The first video is about the place and customers arriving at 4:30 am and standing in line for hours to eat there.

The second link is the first of a series of BBQ smoking secrets from Franklin himself. I have watched several and found them very interesting and entertaining.

    I saw he has some "Master Class" while I was on youtube. He's a funny guy on the the videos. It must be nice to have a business that sells out daily. Now if I were him I'd run 24 hours. Two or three shifts. Unless the zoning prohibits him.

    One of our neighboring villages has a rib cook off every year at this time. Went there for a late lunch. Pretty hard to beat and alot of fun.

    i was stationed at bergstrom afb in austin from 1986 to 1990. learned to cook brisket from my mexican first sergeant. several of us cooked brisket most fridays and sold to the rest of the base personnel to earn money for squadron functions. its funny you should post this now because thats what i did yesterday during the non hurricane was smoke a brisket. one of the most important lessons first sgt gonzales taught me was how to buy a good brisket. you should be able to touch the small end to the large end, bending in a U shape without too much effort. if you cant do this the brisket has too much fat in it, fat doesnt bend and stretch as easily as lean meat does. try it sometime.
