Was going to hold off until tomorrow evening to go with the frittata but couldn't get 'em off my mind. So, I took multiple suggestions minus the cook for two hours on highest heat setting (Giving Mr. Perfect the stinkeye, lol) and I cooked a small bunch.
Grandson #2 is spending the night. He said the ones with pepper jack were awesome. The addition of pepper jack was a last minute thought. They were accompanied by some Rana spinach and ricotta stuffed pasta a liberal dusting of crumbled bacon and a nice Malbec.
