I cook mine similar. Smoking hot fast sear and then finish in a hot oven with more butter for a few minutes to get it medium/ medium rare. I don't use quite as much salt and only add pepper after the steak is turned because I don't like burned pepper. Bob
that is pretty much how I do it.
Not bad. This is probably the best instruction for a grill. Note that he is using post oak.
And fiery auto crashes
Some will die in hot pursuit
While sifting through my ashes
Some will fall in love with life
And drink it from a fountain
That is pouring like an avalanche
Coming down the mountain
I have to say that I have not produced a less-than-perfect steak (or anything else) since I installed Grill Grates on my grill. They are amazing.
I put a brick on my wife's steak when grilling hers and mine side by side.
I found the brick many years ago in Coffeyville, KS just steps away from the spot where the Dalton Gang met their demise.
The brick is marked, "Coffeyville Brick Co.".

Green egg up around 500, a piece of maple or cherry on top of the coals. Throw on a steak that has been salted for a few hours on both side then some Cabela’s steak rub added before taking them out side, 4 minutes a side, butter them up and let them rest a few.
Rocky- Are Grillgrates the aluminum panels with ridges?
