Kitchen Cutlery
Wife & I just recently completed remodeling the kitchen, to include new granite counter tops, stove, sink, and any other appliances. Toward the end she mentioned that our cutlery was 20 years old and she wanted some new knives. We had a complete set of Heinkel knives which were made in Germany. When shopping for a new set we found that Heinkel knives are now made in Japan, so we chose Wusthof which is still made in Solingen Germany. The model we chose (as there are several), is the Classic Ikon. We ordered the complete set of 9 knives, scissors, 6 steak knives, honing steel & block. Folks, I want to tell you if you are ever in the market for any type of kitchen cutlery, spend the money and get the Wusthof. I am by no means a chef but these are absolutely the best handling, sharpest, well designed knives I have ever used. They also offer lifetime sharpening. I found it refreshing that there are still quality made products on the market.

Been using Heinkel for decades...the newer ones pale in comparison to their older ones. Thanks for the info...will come in handy when I need a new set.

Got one of these for Christmas. Sat in my chair cutting wrapping paper into horse manes. I now think I’ll complete the set. Sharpest knife I’ve ever used.

How does that lifetime sharpening work?
Dunno about you guys, but I LOVE the sound a high end high carbon steel blade makes when you draw it past another piece of steel. Zssssiingggggg....

Grouch Attach has 12-15 knives in the knife block thingie and I'd bet $20 not a one is sharp. Good knives are wasted on her so I don't even bother. I keep the knives I use to cut meat stashed in a spot where she can't reach.
The Cutco sharpening works great.
You send them in and there's a small fee based on how many knives you send at once.
Usually takes a week or maybe two, depending on shipping.
If a knife can't be sharpened (there must be a minimum spec) they just replace it.
I've used one of these sharpeners for at least the last 20 years on my Wustof/Heinkel/Cutco knives. For the price it's really an amazing tool.

I bought my Mom a good set of knives years ago thinking her husband could handle the sharpening details when I wasn't there. Well, that failed because he didn't understand the use of the steel. So I bought them one of those Chef's Choice edge Select like above thinking this was easy. Nope. Ground them wrong and nearly ruined the set.
Then I just made sure to bring my ceramic stick with me when I visited and devoted about 30 minutes to fixing up her blades.
These do a great job and are easy to take care of. Cost can run from cheap ($12.00) to a little more expensive ($30.00) at the upscale suppliers. This one is the longer 12" one so it was about $20.00 when I ordered it.

Good for burnishing the burr off, but not too good for shaping.
