Friend brought some sausage to trap club this week. After we all tried it, thinking it was venison, he told us it was snapping turtle. Never would have guessed it, it tasted great. He has also brought goose sausage many times.

I have come to the conclusion a person can make sausage out of just about anything. With the correct seasonings and processing it might even taste good.
I thought they taste like chicken?

you don't know fine dining until you have partaken in snapping turtle mulligan brewed up by a grizzled old redneck river rat.
I live on the water, and turtle is a fairly regular item. I guess I am an old river rat.
...I caught a softshell turtle that was 26" to 30" wide, biggest soft shell I'd ever seen...decided to clean and try eat it...Holy mother of Mary, that turtle was the hardest animal Ive ever cleaned, a real PIA...the meat was really, really good, tender, moist, and reminded me of a very good beef, but I wouldn't ever clean another one...surely there is a method to clean 'em that's easy...
