Fall 2021 Deer and Hog Hunt

This is late in posting but my Father came down for our annual fall, deer and pig hunt early November. Hunting was tough because we had a very wet year and there was so much natural food the animals were not interested in corn. This is a good thing in all other respects. We did get one animal apiece. Dads pig looks enormous because he always stands in front of the animal so a 300 lb. pig appears small. I had him step back some and the 100 Lb. looks like a hippo. I got a nice buck and Dad got to take 40lbs of game meat and sausage home to my Mother. No matter how the hunting turns out I cherish every moment he is here.

I use the loin and tender loin to cook like a pork chops, usually a schnitzle type recipe. I have dry cured the hams like prosciutto. The rest I grind up to make various sausages. Sometime I'll just brown the ground pork like ground beef. I have an unlimited supply of wild hogs and like to hunt so I eat a lot and give a lot of sausage away.
Where do you live to have that many hogs?? I keep hearing about lots of hogs in the upstate of SC but I have yet to see a wild hog in this area.
I live in San Antonio TX and hunt in Junction. This is just a sample.
